Place all ingredients for the dressing (except sesame seeds), into a food processor or spice mill and blend together.
Grate carrots and thinly slice cabbage. Mix vegetables together, along with rest of filling. Add dressing until filling is evenly coated.
Prep the collard greens by slicing off the top of the stem (don't cut the stem out of the leaf, but cut the thick part off so that the leave is easier to roll).
Take some of your vegetable mix and spread it out on a leaf of collard greens. Next, take some alfalfa sprouts and lay them next to the veggie mix. Wrap and enjoy.
