Raw Collard Green Wraps

Ingredients

Dressing:
  • 2 Tbsp olive oil
  • 2 Tbsp apple cider vinegar
  • 1/4 onion
  • 1 Tbsp grated ginger
  • 5 large basil leaves
  • 1/2 Tbsp salt
  • Juice of 1 lemon
  • 1 Tbsp agave nectar or honey
  • chili powder (to taste)
Filling:
  • 2 carrots - grated
  • 1/4 cabbage - thinly sliced
  • black pepper
  • red clover or alfalfa sprouts
  • walnuts or pecans
  • basil
  • basically any other greens you like will work in here
Wrap:
  • collard greens, kale, cabbage or other sturdy leaf

Recipe

1. Place all ingredients for the dressing (except sesame seeds), into a food processor or spice mill and blend together. 

2. Grate carrots and thinly slice cabbage.  Mix vegetables together, along with rest of filling.  Add dressing until filling is evenly coated.

3. Prep the collard greens by slicing off the top of the stem (don't cut the stem out of the leaf, but cut shave the stem so the leaf is easier to roll).

4. Take some of vegetable mix and spread it out on a collard leaf.  Next, take some alfalfa sprouts and lay them next to the veggie mix.  Wrap and enjoy!
