Watermelon Radish and Kale Wrap

Ingredients

Kale Wrap:
  • 1 multi-grain organic tortilla
  • 2-4 Tbsp organic garlic hummus
  • 1/4 cup organic sprouts
  • 1 1/2 cups kale, shredded
  • prepared Watermelon Radish salad
Watermelon Radish Salad
  • 1 large watermelon radish thinly sliced or julienned
  • 1 tsp olive oil
  • 1 tsp brown rice vinegar
  • sea salt and pepper to taste

Recipe

1. Toss all ingredients for Watermelon Radish Salad together and let sit overnight in the fridge.

2. Lightly warm tortilla and spread with hummus. Place watermelon radish salad on hummus and top with sprouts and kale (if preferred, you can lightly saute the kale first).

3. Roll tightly and serve with remaining salad and kale. Make sure to use the remaining liquid as a dressing. Enjoy!
