Greek Bruschetta


  • 2 pieces good, crusty bread
  • 1 Large or 2 small tomatoes, sliced
  • Crumbled Feta cheese
  • Fresh oregano
  • Olive oil
  • Balsamic Vinegar (if desired)
  • Salt and Pepper


Everyone should be familiar with a Italian caprese, which is a great summertime treat of mozzarella, basil and tomatoes. Here is a fun Greek twist, where the cheese is replaced with feta, and the basil is swapped with oregano. Toast your bread, and drizzle with olive oil and vinegar. Add slices of tomato, and sprinkle the feta crumbles and oregano over the top. Add salt and pepper to taste and enjoy immediately.
