This fancy salad is extremely easy to make given the right ingredients. The natural bitterness of the dandelion greens is nicely offset by the sweetness of the pears and the richness of the blue cheeese.
1. Rinse and dry the dandelion greens. Coarsely chop the greens into bite-sized pieces.
2. Whisk together the vinegar and olive oil and season lightly with salt and pepper.
3. Combine the dandelion greens, walnuts, cheese and dressing in a large bowl. Gently toss to combine and top with pears. Drizzle with olive oil and season with salt and pepper.
