Curried Sauteed Cauliflower

Ingredients

  • 1/2 head cauliflower, chopped into small florets
  • 2 Tbsp neutral oil or ghee
  • 1 tsp cumin seed (more or less to taste)
  • 1/2 red or other onion or shallot, chopped finely
  • 1 tsp sweet curry
  • 1/2 tsp hot curry
  • salt and pepper to taste
  • 1/4 cup (or to taste) fresh cilantro, chopped
  • 1 fresh lime, quartered
  • 2-4 Tbsp raisins, optional
  • 2-4 Tbsp toasted, slivered almonds, optional
  • Raita, for serving, optional
  • Rice, for serving, optional, for serving, optional

Recipe

Use a large frying pan or skillet which will hold all the cauliflower in a single layer. Preheat pan for 30 seconds over medium-high heat, add oil and heat about 1 minute. Add cumin seeds and saute 30 seconds, add your onion, cauliflower, curry powders, raisins (if using) salt and pepper and cook 6-8 minutes, stirring only occasionally so onion caramelizes and cauliflower gets brown in spots.

Add most of chopped cilantro and stir, remove from heat and serve. Top with the rest of the cilantro, almonds (if using). Serve with lime quarters. Make it a light meal by adding rice and raita
