Apple Cobbler

Ingredients

  • 4 apples, peeled, cored & sliced 1/4" thick , about 6 cups
  • 2 Tbps lemon juice or apple cider
  • 1 tsp cinnamon
  • 1 cup sugar, divided
  • 1 pinch salt
  • 1/2 cup unsalted butter, siftened
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1-2 Tbsp water
  • 1 pint ice cream (vanilla, or your favorite complimentary flavor)

Recipe

1. Preheat oven to 350 °F. Lightly grease 8" square or 9" round baking pan

2. Toss apples with lemon juice and cinnamon and place in prepared pan.

3. Beat butter and 1/2 cup suage together until creamy. Add butttermilk, flour, baking soda, baking powder, salt and vanilla, then beat until smooth. Dollop batter over prepared apples and spread to even layer. Sprinkle with remaining 1/2 cup sugar and then sprinkle with water to moisten sugar.

3. Bake for 35-40 minute, until surface is golden and crispy and a toothpick inserted in center of topping comes out clean. Allow to cool for 30 minutes. Serve warm with a scoop of ice cream.
