Sometimes beets don’t get the love that they deserve. Their earthy, sweet flavor is wonderful in soups and stews. They also pair well with their leafy cousins chard and spinach. The variety will change throughout the year based on what we currently have available, but we’ll always try to source them as locally as possible. From week to week you may see exciting varieties like the candy-striped Chioggia, the bright golden, or the quirky Forono, but sometimes there’s nothing like a classic red beet.
