Mexican-Style Grilled Corn

Ingredients

  • 2 ears of corn
  • 1 Tbsp mayonnaise
  • 1 Tbsp freshly squeezed lime juice, or to taste
  • 1/8 tsp chili powder, or to taste
  • Salt and freshly ground black pepper

Recipe

Prepare a grill, heating to medium-high.

As the grill heats, shuck the corn, removing any residual silk with a kitchen brush or clean dish towel.

Put corn on the grill and cook until kernels begin to char, about 3-5 minutes, then turn. Continue cooking and turning until all sides are slightly blackened. Remove from heat.

Mix together mayonnaise, lime juice, chili powder and a little salt and pepper in a small bowl. Taste and adjust seasoning, adding more lime juice or chili powder if you like. Brush mixture on corn before serving.
